Chechil is the Armenian/Caucasian artisan fresh-curd cheese tradition that runs across the Caucasus region (the same lineage as the braided Chechil string cheese cluster, but in this unsmoked unbraided format). Curd-fresh, spoon-soft, pillow-fresh, milky-mild, tang-light — the canonical Georgian/Caucasian fresh cheese register, distinct from the braided string-cheese form (CheeseMakers + CheeseMeister + Karoun cluster). The right pour for the khachapuri filling (Georgian cheese-bread — Chechil is one of the canonical fillings), the breakfast cheese spoon alongside Georgian flatbread, the mezze plate, or the Georgian-style fresh-cheese-and-walnut-and-honey snack.
