Carpathian Horezu Sheep Hard Fermented Romanian Cheese — Romanian aged sheep cheese from the Horezu region in the 300g (10.6oz) format from Carpathian, hard-fermented register distinct from the standard Cascaval pasta-filata cluster. Sheep-rich, age-deepened, salt-aged, slice-firm with the characteristic deep tang of hard-fermented sheep milk — the Horezu register is closer to a Romanian-Greek aged-cheese parallel than to the pasta-filata Kashkaval/Cascaval form. The right pour for the cheese-board centerpiece with Romanian red wine, the grated topping for mămăligă (the sheep-tang folds beautifully into polenta), the pasta grating in lieu of pecorino, or the Slava-table cheese course.
