The Zagreb-house spirit vinegar for the home-preserving operation — distilled-grain vinegar at sharper strength than wine vinegar, clean-flavored, calibrated for the autumn pickle jar and the cabbage crock. Pour into the brine for kiseli krastavci, build the cure for kisela paprika (Croatian pickled peppers), pour into the kupus barrel for the kiseli kupus winter ferment, or use as the pickling acid for any household preserve that wants the clean spirit-vinegar bite.
