What Bosnian coffee is
Turkish coffee is prepared in a cezve using very finely ground coffee without filtering. Bosnian coffee uses the same method with one change: when the water boils, a little is set aside in a cup, the coffee goes into the džezva, then the reserved water is added and the pot returns to the heat until it boils again, which takes seconds. (source)
How it differs from espresso and filter
Domaća kafa is unfiltered, so the grounds stay in the cup, and some sink while much stays suspended. (source) Filter coffee passes water through a paper or metal filter. Espresso, in general, forces hot water through coffee under pressure and is a different grind.
How to make it in a džezva
- Put cold water in the džezva, about one small cup per serving.
- Heat it. When it just boils, set a little water aside in a cup (Bosnian method).
- Add the coffee: at least 7 grams, a few teaspoons, per person. Add sugar if you want it. (source)
- Pour the reserved water back and return to the heat. Remove it the moment it froths.
- Pour into small cups, wait a minute for the grounds to settle, and serve with a glass of water and something small and sweet. (source)

Grind and roast
The coffee must be a very fine powder, since fineness affects foam and mouthfeel. One source puts particle size at 75 to 125 microns. (source) Look for words like Turkish-style, fine grind or finely ground on the pack. Berix Turkish Coffee is labeled fine grind (453g, $16.49), Grand Kafa Aroma is finely ground (500g, $19.79), and C Kafa is Turkish-style (500g, $19.79). Our data gives no roast level for any coffee.
Franck, Grand Kafa and Doncafé
- Franck: a Zagreb company, founded in 1892 as part of Heinrich Franck Söhne. Its best-known coffee is the vacuum-packed Jubilarna, nicknamed "the little brick". (source) Jubilarna is $8.79 for 250g and $16.49 for 400g.
- Doncafé: a Serbian brand. Doncafé Minas 200g is $5.99 and lists Rio Minas arabica (minimum 26%) with Vietnam, India and Central African robusta. Moment 500g is $19.79.
- Grand Kafa: a Serbian brand. Gold and Aroma are ground coffee, 500g, $19.79. Grand and Doncafé are both now Atlantic Grupa brands. (source)

Questions people ask
What is domaća kafa?
Domaća kafa is Bosnian home-style coffee: very finely ground coffee heated in a džezva with water and served unfiltered, grounds in the cup. It follows the Turkish method with one Bosnian change, a little hot water set aside and added back before the final boil. (source)
How is Bosnian coffee different from espresso?
Bosnian coffee is boiled in a džezva from a very fine powder and served unfiltered, with grounds in the cup. Espresso, in general, is pushed through ground coffee under pressure by a machine. Use a coffee ground for a džezva, not one labeled espresso. (source)
How do I make coffee in a džezva?
Heat cold water in the džezva, set a little aside at the boil, add at least 7 grams of finely ground coffee per person, pour the reserved water back, and heat until it froths. Remove it before it boils hard, then pour and let the grounds settle. General guidance. (source)
How much coffee per cup?
At least 7 grams of ground coffee per person, which is several teaspoons, with roughly one small cup of water per serving. A heaped teaspoon is a common measure. Adjust to taste. This is a general guide; our product data holds no brewing ratio. (source)
What grind is Bosnian coffee?
A very fine powder, finer than espresso. One source gives 75 to 125 microns. On the pack, look for Turkish-style, fine grind or finely ground. Berix is labeled fine grind, Grand Kafa Aroma is finely ground, and C Kafa is Turkish-style. (source)
