How is kajmak made?
Traditionally, milk is simmered slowly for about two hours, then the cream is skimmed and left to chill and mildly ferment (source). It is almost always made at home in the Balkans (source). The jars we sell are factory-made, and their labels list pasteurized cream, salt and cultures.
Kajmak vs clotted cream vs cream cheese
Kajmak is called similar to clotted cream: high fat, thick, but not fully compact (source). Compared with cream cheese, kajmak is made from cream rather than curd. Our Poljorad Travnički listing calls itself a cream cheese spread made from mixed cream or sour cream plus fresh cheese, 65% fat minimum. Labels vary by maker, so read the list.

Questions people ask
What is kajmak?
Kajmak is a creamy, salted dairy spread similar to clotted cream, made from skimmed and lightly fermented cream (source). It is eaten in Bosnia, Serbia, Montenegro, Bulgaria and Albania. Our Mlekara Šabac jar (250 g, $7.69) lists pasteurized cream, salt, water, starter cultures and microbial rennet, and is sold refrigerated.
How do you eat kajmak?
Put it in lepinja flatbread, or melt it on a pljeskavica patty (source). Ćevapi are usually served with chopped onions and kajmak (source). It is also served with desserts such as baklava, honey or fruit preserves (source), or used as a pancake filling.
Is kajmak pasteurized?
The jars we have ingredient data for say so. Mlekara Šabac lists "pasteurized cream" and Balkan Farms lists pasteurized milk. Traditional homemade kajmak is a different matter. For any other jar, check the printed label on the product page, since our data does not state it for the Poljorad 200 g jar.
How long does kajmak keep?
Homemade kajmak can keep for weeks in the refrigerator, but it gets harder and loses quality (source). For store jars, follow the printed date and the opened-jar instruction. As general guidance, keep it cold and covered. One Poljorad pack says use within 3 days of opening.
Can you freeze kajmak?
The Ethnic Bakery Domaći Kajmak (408 g) is marked frozen on its package, so freezing is part of how that product is handled. For other jars, follow the label. This is general guidance. Texture can change after thawing, and we would not refreeze it once thawed.
Is kajmak the same as cream cheese?
No. Kajmak is skimmed, fermented cream (source). Cream cheese is made from curd. The confusion exists because some labels, including our Poljorad Travnički listing, describe kajmak as a cream cheese spread, so read the ingredient list to see which you are getting.
