Carpathian Cascaval de Capra Romanian Goat Kashkaval — Romanian goat-milk Cascaval in the 300g (10.6oz) format from Carpathian, the goat-anchored variant of the canonical Romanian pasta-filata cheese family. Goat milk gives this a distinct flavor profile from the cow-milk and sheep-milk Cascaval cluster: brighter, slightly tangier, with the characteristic goat-dairy note that diaspora goat-cheese eaters recognize. Slice-firm, age-deepened, nutty-pasta-filata. The right pour for the pohovan breaded-fried slices (the goat character cuts through frying), the pljeskavica grill-melt with a sharper edge, the mămăligă grated topping where goat-cheese notes are welcome, or the cheese-board with Romanian wine.
