Hulled sesame seeds in the Alpojo Macedonian-household pour — the toasted-seed lift the Skopje and Sofia kitchens scatter over simit bread, sprinkle into halva, and fold into baklava layers. Scatter over the simit ring before baking, fold into the homemade tahini with a pinch of salt, sprinkle over a warm pita with za'atar and oil, or layer between phyllo for a Macedonian-style sweet pastry with walnut and honey.
