Heritage: Kilchoman opened in 2005 as Islay's first new distillery in over a century, and is one of only a handful of farm distilleries in Scotland that grows, malts, distills, ages, and bottles entirely on-site. Machir Bay is the distillery's flagship expression, named for the wild Atlantic beach near the distillery on Islay's west coast.
Tasting notes: Bright amber color. Distinctive peaty smoke and maritime influence on the nose, balanced by citrus, vanilla, and a lingering campfire warmth. Smooth, full palate; long smoke-and-salt finish.
Pairing: Sip neat or with a splash of water to open the aromatics. Excellent with smoked seafood, dark chocolate, or alongside a hand-rolled cigar.
