The tarhonya pellet — small toasted Hungarian egg-pasta drops, oven-baked into pörkölt accompaniment or simmered into a tomato-paprika tarhonya as a full dish. Toast in lard with onion and paprika, simmer in stock with smoked sausage for the one-pot tarhonyás hús, or fold under pörkölt for the rich stew side at the diaspora-Magyar Sunday table.
