Cascaval is the Romanian/Balkan WORK cheese — slice-firm, age-deepened, nutty-pasta-filata texture made for cooking heat. The right pour for pohovan kashkaval (breaded-fried slices, the Balkan diner classic), the grated mămăligă topping (Romanian polenta with melted Cascaval), pljeskavica melt-on-top, or burek post-bake topping.
