Zlatibor's dimljena slanina — the western-Serbia pancetta. Pork belly salt-cured then naturally hickory-smoked in the Zlatibor highlands' suho meso tradition — firmer and more aromatic than Italian pancetta. Slice thin and serve cold with raw onion and rye, render to flavor a pot of pasulj, or fry crisp to top kajmak-stuffed potatoes.
