Kashar in Turkish + Kashkaval in the Balkans = same pasta-filata family, regional variation. Slice-firm, age-deepened, mild-yellow, nutty-pasta-filata — Turkish Kashkaval reads slightly milder than the Bulgarian or Romanian sheep-Kashkaval cluster.
